Delicious Healthy Muesli Bars

Like a lot of people, I am that girl that likes to start off the week on a healthier note. I’m not going to call it a diet but there are definitely good intentions in wanting to eat healthier. I’ve been researching a lot recently on meal prep and eating well but not at a huge cost because that is something I struggle with, eating well can come at a cost.
This week I made these muesli bars and I really surprised myself at how good they really taste. Sometimes eating healthy can be very boring!
1 Full Cup Of Oats (90 Grams)
1/2 Cup Of Cranberries (50 Grams)
1/2 Cup Of Sultanas (88 Grams)
1/2 Cup  Of Pumpkin Seeds (60 Grams)
Handful Of Chopped Nuts
1/2 Teaspoon Of Ground Ginger
10 Medjool Dates (No Pips)
325ml Water
Heat oven to 180c and line a baking tray with greaseproof paper and set aside.
In a bowl add everything apart from the dates and water and set aside.
In a pan add the water and dates (makes sure you’ve taken the pips out!) and cook for 10 minutes on a low to medium heat until the dates have softened.
Pour the date mixtures into the bowl of dry ingredients and mix until all covered.
Pour the mixture into the lined baking tray and pop in the oven for 15 minutes.
After 15 minutes take out the oven and cut in to bar shapes, pop back in the oven for a further 15-20 minutes.
